Peter Luger is, undoubtedly, one of the best steak houses in New York City — “if not the best,” says Manny, a server who has worked there for 15 years. To earn a badge like that, a restaurant must run with precision, with respect, and with trust. And so, the people who man the restaurant’s tables, kitchens, halls, and bars have developed a camaraderie. “We are a family in a sense since we see each other every day, we have issues with each other every day, we try to make a living with each other every day,” one of the crew tells us. Spending at least 40 hours a week together as parts of a near-perfect machine will do that to you, of course. But it’s the respect they all have for one another that truly keeps them (and everybody’s meals) together.
